Philosophy
In the production of our wines we seek balance, freshness, finesse, elegance and depth. We seek wines that represent our nature and the typicity of the soils, varieties and environment.
Our winemaking is very natural. We work with the indigenous yeasts of our vineyards without using chemical products. We try to be minimally interventionist in order to produce wines that are honest and open to our area and the nature that surrounds us.
The winery
The winery is located in an old manor house, the oldest part of which dates back to the end of the 16th century. Our ancestors were already making wine in the old earthenware jars in the cave where we now have our bottle cemetery. The present winery was founded in the middle of the 20th century (1963).
Winemaking
Fermentations are carried out by separating the different plots in the villages of Méntrida and Real de San Vicente. We work with temperature-controlled stainless steel tanks and open wooden vats where our work is carried out without machines. Exclusively by treading and manual work, we do not cold stabilise, we do not clarify and we do not filter. Bottling is carried out with minimum doses of sulphur.
