About Pago de los Capellanes

Pago de los Capellanes Winery

This family winery was founded in Pedrosa de Duero, in the heart of the D.O. Ribera del Duero, the hometown of Paco Rodero, the alma mater of this project, who passed away in 2023. Paco, with his father Doroteo, tended his family vineyard, a plot that had belonged to the village chaplains centuries ago.

This small vineyard of the native Tempranillo variety was the beginning of the project of Paco Rodero and his wife Conchita Villa. Since then, they have worked the vineyards to supply wineries in Ribera del Duero and to found their own, where they have been making wines for 20 years. In addition, since 2014 they have also owned the O Luar do Sil winery, where they make white wines in Valdeorras from the Godello grape variety.

The vineyards of Pago de los Capellanes are planted with the Tinto fino or Tempranillo variety, the native grape of Ribera del Duero. Although initially there were only a few selected vines, year after year they have been multiplying their best clones.

The plants that have best adapted to the soil and climate have been chosen in the field to obtain a wide variety of plots. Each plot receives personalised care according to its characteristics in order to obtain the best fruit. A reduced production allows the strict control of the quality of the product, as well as the follow-up of all the bottled batches.

In the vineyards they obtain 5,000 kilograms of grapes per hectare, below the 7,000 allowed by the Ribera del Duero D.O. regulatory council, a quality that guarantees the best quality of the raw material.

The ageing process takes place in an underground cellar with a depth of 10 metres. There, the wines rest in new French oak barrels (from 1 to 3 years) until they reach the optimum maturity for blending or coupage. A selection of 22 types of French oak according to their origin (Alier, Nevers, Centre), air-dried (from 24 to 60 months) and toasted, help to age the wine.
